When you can’t decide if you want Mexican food or burgers, then this is what you should make! Juicy beef patties, flavoursome guacamole, corn chips for crunch and a spicy cheese sauce to top it all off! These Mexican Cheese Burgers are a must try.
This recipe came about due to a big dilemma. Did I want to make a Mexican dish or did I want to have home-made cheese burgers. Why not both?! This fusion of the two is quickly becoming my cheesy go to weekend dish, along with my Baked Mac and Cheese. Being a fusion, it is not an authentic dish but it does contain strong Mexican flavours. Everything apart from the buns is made from scratch!
I will go over each of the individual elements with some tips and why you will love these Mexican Cheese Burgers!
Burger Patties
Many people tend to over complicate burger patties. To make truly good beef patties, you really only need a higher fat beef mince and salt and pepper for seasoning. Using higher fat (17% or more) serves two purposes. The fat creates a juicy and flavoursome patty. It also ensures that it binds together well. You will not need eggs or breadcrumbs!
Guacamole
This Guacamole is based off authentic Guacamole recipes and contains no fillers or westernised ingredients. It is creamy, fresh, mildly spicy and zingy. Most importantly, it is super tasty! I know some people have an aversion to coriander but I would highly recommend using it. However, if you don’t like it or want to buy it just for this, it will still be nice without it.
Cheese Sauce
I contemplated making a proper Mexican Queso sauce, but I felt like this sauce ticked the most important boxes. A cheesy sauce that was mildly spicy and so much better than the fake stuff in the jars. It comes together fairly quickly which is what you want when you have a few different elements to make and cook, such as in this dish.

What I love about this burger is you can pour the cheese sauce over it or dip it in. You can mop up the rest of the cheese sauce and any leftover guacamole with some corn chips as well!
Mexican Cheese Burgers
Soft buns, a juicy beef patty, flavoursome guacamole and a spicy cheese sauce!
Ingredients
- 1 tablespoon of olive oil
- 4 milk bun burger buns sliced horizontally in half.
- 8 corn chips, plus more to serve
- 500 grams of beef mice that is preferably 17% fat or more ( Avoid lean mince) (see note)
- Salt and pepper to season
- 1 tablespoon of oil for the pan
- 2 large ripe avocados
- ¼ cup of lime or lemon juice
- 1 tomato, seeds removed and diced
- 1 jalapeño, finely chopped and de seeded
- ¼ cup of coriander (cilantro) chopped (optional but highly recommended!)
- ¼ teaspoon of salt
- 2 tablespoons of butter
- 2 tablespoons of plain flour
- 1 cup of whole milk
- 1 and a half cups of cheddar or similar (see notes)
- 1 tablespoon of your favourite hot sauce
Instructions
1.Place avocado and lime/ lemon juice in a bowl and mash until soft and combined
2.Add tomato, jalapeno, coriander and salt and mix to combine
3. Divide the mince into 4 equal patties, with the diameter being just smaller than the burger buns
4. Place a frying pan over a medium high heat and add 1 tablespoon of oil
5.Season both sides of the burger patties and place into the pan.
6.Cook for approximately 5 minutes on either side or until just cooked through. Turn off heat.
7.For the sauce, place the butter in a saucepan and melt over medium heat. Then add the flour and stir until combined.
8.Slowly add the milk, ensuring that the mixture has combined before adding further milk.
9.Once the milk has all been added, place the cheese and hot sauce in and mix until melted and combined and remove from heat. Ensure that you do not cook it for too long, otherwise the sauce can become grainy. If the sauce is too thick, add a splash of milk and stir. It should be fairly thick, but thin enough to pour or to dip a corn chip in.
10.Toast the burger buns in a frying pan until golden
11.Place the burger patty on a bun, followed by 2 tablespoons of the guacamole, then 2 corn chips and repeat for each burger.
12.Depending on your preference, you can then pour the cheese sauce over the burger and then place the bun on it. Otherwise, you can dip your burger into your own personal cheese sauce! You should use 2/3 tablespoons of cheese sauce and there should be some left over for dipping corn chips.
13.Serve with extra corn chips on the side for the remaining cheese sauce and for any remaning guacamole.
Notes
1.You will want to use a beef mince of at least 17% fat to ensure the burger is juicy and sticks together. The higher the fat content, the better. (This is not a meal for dieting!)
2.Do not use a vintage or aged cheese as you need a cheese that melts well. A mild cheddar, gouda, Jarlsberg, Colby or block mozzarella would be fine. Do not use pre shredded cheese as they often contain anti caking agents that will make a lumpy and or grainy sauce.
3.Do not overcook the cheese sauce! Make sure that you take it off the heat once the cheese has just melted to ensure that it does not become grainy.
4.Storage. This is best eaten fresh. However, if you do have leftovers ensure that the guacamole is kept in an airtight container. You should also cover with gladwrap, ensuring the air is removed. Do not reheat the cheese sauce in the microwave. You can reheat this on a low heat on the stove, stirring occasionally until warm.
5. Nutrion is for 4 servings. Be aware that there should be some excess cheese sauce and guacamole.
